  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 4 cups beef broth
  • 1 cup water
  • 1/2 cup long-grain white rice
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup frozen corn
  • Salt and pepper (to taste)
  • Juice of 1 lime
  • 1/4 cup chopped fresh cilantro
  • Shredded cheese
  • Sour cream
  • Sliced avocado
  • Tortilla strips or chips
  • Extra lime wedges

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add ground beef and cook until browned.
  2. Add diced onion, bell pepper, and jalapeño (if using). Sauté until softened.
  3. Stir in minced garlic and cook for another minute.
  4. Add cumin, chili powder, smoked paprika, and oregano; cook briefly to toast the spices.
  5. Pour in beef broth and water; bring to a boil. Stir in rice and reduce heat to low, simmering until rice is tender.
  6. Mix in black beans and corn; continue to simmer until heated through.
  7. Season with salt and pepper; stir in lime juice and cilantro before serving.
