Instructions
- In a bowl, mix olive oil, garlic, oregano, cumin, salt, and pepper to create the marinade.
- Rub the marinade over the flank steak and let it sit for at least 15 minutes (or up to 2 hours in the fridge).
- Preheat your grill or skillet over medium-high heat and cook the steak for about 4–5 minutes per side until desired doneness.
- Allow the steak to rest for 5 minutes before slicing against the grain.
- In a separate bowl, combine cherry tomatoes, cucumber, red onion, parsley, feta cheese, lemon juice, salt, and pepper to prepare the salad.
- To assemble bowls: divide quinoa among serving dishes and top with sliced steak, salad mixture, hummus, and tzatziki.
