- 12 ounces dry farfalle pasta
- 1 English cucumber, diced
- 1 pint cherry tomatoes, halved
- 2/3 cup sliced kalamata olives
- 4 ounces crumbled feta cheese
- 1/2 medium red onion, thinly sliced
- 1/4 cup extra virgin olive oil
- 3 tablespoons red wine vinegar
- 1 tablespoon freshly squeezed lemon juice
- 2 teaspoons dried oregano, minced
- Minced garlic and seasonings
Instructions
- Cook the pasta in salted boiling water according to package instructions until al dente (8–10 minutes). Drain and rinse under cold water.
- While pasta cooks, prepare the vegetables: dice cucumber, halve tomatoes, and slice red onion.
- In a mixing bowl, whisk together olive oil, red wine vinegar, lemon juice, oregano, honey, minced garlic, black pepper, salt, and crushed red pepper flakes.
- In a large bowl, combine drained pasta with prepared vegetables and feta cheese. Pour dressing over salad and toss gently.
