  • 1 cup Greek yogurt
  • 46 pita pockets
  • 1 Persian cucumber
  • 6 oz cherry tomatoes
  • Fresh mint
  • Olive oil
  • Fresh herbs (oregano, dill)
  • Red onion
  • 1/4 cup red onion, finely chopped
  • 1/2 cup panko bread crumbs
  • 2 tbsp fresh oregano (sub 1 tbsp dried)
  • 2 tsp thyme, fresh or dried
  • 1 tbsp lemon zest
  • 68 kalamata olives, pitted and finely chopped
  • 1/2 tsp salt
  • 1/4 cup red wine vinegar
  • 2 tbsp chopped dill
  • 1 tsp sugar
  • 1 tsp salt
  • Freshly ground black pepper
  • 1 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tsp honey
  • 1/2 tsp salt
  • Arugula or micro greens for serving
  • Oil for pan frying

Instructions

  1. Prepare the salad by combining sliced cucumber, halved tomatoes, chopped onion, red wine vinegar, dill, sugar, salt, and pepper in a large bowl. Toss well and refrigerate.
  2. For the mint yogurt sauce, blend Greek yogurt, olive oil, lemon juice, mint leaves, honey, and salt until smooth. Set aside.
  3. In a bowl, mix ground beef with chopped onion, panko breadcrumbs, herbs, lemon zest, olives, and salt. Form into meatballs.
  4. Heat oil in a skillet over medium heat; cook meatballs for 8–10 minutes until golden brown.
  5. Stuff warm pita pockets with arugula or micro greens first, followed by salad and meatballs. Drizzle with the mint yogurt sauce before serving.
