- 1 lb lean ground beef
- 1 cup Greek yogurt

- 4–6 pita pockets
- 1/4 cup red onion
- 1/2 cup panko bread crumbs
- 2 tbsp lemon juice
- 1 tbsp olive oil
- 2 tsp honey
- 1/2 tsp salt
- 1/4 cup red wine vinegar
- 2 tbsp chopped dill
- 1 tsp sugar
- 1 tsp salt
- Freshly ground black pepper
- 1 tbsp lemon zest
- 6–8 kalamata olives
- 1–2 tbsp flour (optional)
- Oil for pan frying
- Arugula or micro greens for serving
Instructions
- In a large bowl, combine ground beef, chopped onion, panko breadcrumbs, herbs, lemon zest, chopped olives, and salt. Form into meatballs.
- For the mint yogurt sauce, blend Greek yogurt with olive oil, lemon juice, mint leaves, honey, and salt until smooth.
- Cook meatballs in a skillet over medium heat until crispy on the outside and cooked through.
