  • 9 tablespoons unsalted butter (melted)
  • 1 ¼ cups canned mango puree
  • 2 large limes (zest and juice)
  • 6 egg yolks
  • 4 tablespoons unsalted butter (for curd)
  • Coconut flakes (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, salt, brown sugar, coconut, and melted butter until combined. Press into a 9-inch tart pan.
  3. Bake for 10 minutes; let cool.
  4. Reduce oven temperature to 325°F (163°C). Combine mango puree, lime zest/juice, vanilla extract, sugar, salt, and egg yolks in a heat-proof bowl.
  5. Cook over simmering water for about 20 minutes until thickened; stir in additional butter until smooth.
  6. Pour curd into the crust; bake for 15-17 minutes until set. Cool completely then chill for at least four hours.
  7. Garnish with fresh mango slices and coconut flakes before serving.
