  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 1/4 cup lemon juice
  • Zest of 1 lemon
  • 1/2 cup sugar
  • 3 tablespoons cornstarch
  • 1/2 cup milk
  • 3 large egg yolks
  • 1/4 teaspoon vanilla extract
  • 1 cup fresh raspberries
  • 1/2 cup powdered sugar
  • 1 tablespoon lemon juice

Instructions

  1. Prepare the choux pastry by combining water and butter in a saucepan until boiling. Remove from heat and stir in flour and salt. Allow cooling slightly before adding eggs one at a time.
  2. Preheat your oven to 400°F (200°C). Pipe long strips of choux pastry onto a baking sheet lined with parchment paper.
  3. Bake for 25-30 minutes until golden brown; cool on wire racks.
  4. Prepare the lemon cream filling by whisking together sugar, cornstarch, milk, lemon juice, zest, egg yolks, and vanilla over medium heat until thickened. Fold in whipped heavy cream after cooling.
  5. Fill cooled eclairs with lemon cream through small holes made at one end and top with fresh raspberries dusted with powdered sugar.
