Instructions
- Prepare the choux pastry by combining water and butter in a saucepan until boiling. Remove from heat and stir in flour and salt. Allow cooling slightly before adding eggs one at a time.
- Preheat your oven to 400°F (200°C). Pipe long strips of choux pastry onto a baking sheet lined with parchment paper.
- Bake for 25-30 minutes until golden brown; cool on wire racks.
- Prepare the lemon cream filling by whisking together sugar, cornstarch, milk, lemon juice, zest, egg yolks, and vanilla over medium heat until thickened. Fold in whipped heavy cream after cooling.
