  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • 12 tsp culinary lavender, finely ground or steeped
  • Fresh honeycomb (cut into small chunks)
  • Drizzle of extra honey (optional)
  • A tiny sprinkle of dried lavender buds or lemon zest for garnish

Instructions

  1. Preheat the oven to 325°F (163°C) and line a springform pan with parchment paper.
  2. Mix graham cracker crumbs, sugar, salt, and melted butter; press into the pan and bake for 10 minutes.
  3. Steep culinary lavender in lemon juice for 10 minutes; strain if desired.
  4. Beat cream cheese until smooth; gradually mix in sugar and eggs, followed by sour cream, lemon juice, zest, and vanilla extract.
  5. Pour filling over cooled crust; bake in a water bath for 50–60 minutes until set.
  6. Cool gradually in the oven, then chill in the fridge for at least four hours or overnight.
  7. Before serving, top with honeycomb and drizzle with honey.
