  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons jerk seasoning
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 1 cup jasmine rice
  • 1 ½ cups water
  • 1 teaspoon salt
  • 1 cup fresh pineapple, diced
  • ½ cup fresh basil leaves, chopped
  • 1 tablespoon soy sauce

Instructions

  1. Marinate the shrimp by mixing it with jerk seasoning, olive oil, and lime juice in a bowl. Let it sit for about 10 minutes.
  2. In a pot, bring water to a boil, add jasmine rice and salt. Cover and reduce heat to low; cook for 15-20 minutes until tender.
  3. In a skillet over medium heat, sauté the marinated shrimp for about 3-4 minutes on each side until pink and opaque.
  4. Fold in pineapple, basil, remaining lime juice, and soy sauce into the skillet with the shrimp until heated through.
  5. Fluff cooked rice with a fork and serve topped with the jerk shrimp mixture.
