  • 2 Hearts of Romaine, shredded
  • 1/2 lb Salami, sliced
  • 1/2 lb Provolone cheese, sliced
  • 8 oz Marinated Mini Fresh Mozzarella Balls
  • 1 Cucumber, thinly sliced
  • 1 Red Pepper, sliced into strips
  • 1 C Mild Pepper Rings
  • 1 White Onion, sliced into strips
  • 1/2 lb Pepperoni, diced
  • 1 C Red Wine Vinegar
  • 1/2 C Olive Oil
  • 1 T Garlic Powder
  • 1 T Dried Basil
  • 1 T Brown Sugar (or natural sweetener)
  • 2 t Kosher Salt

Instructions

  1. In a large mixing bowl, layer the shredded romaine lettuce followed by red pepper slices, cucumbers, onion strips, pepper rings, diced pepperoni, salami squares, provolone squares, mozzarella balls, and cubed Parmesan cheese.
  2. Chill the salad in the refrigerator for at least 4 hours to allow flavors to meld.
  3. For the dressing: whisk together red wine vinegar, olive oil, garlic powder, dried basil, brown sugar (or natural sweetener), and kosher salt in a separate bowl.
  4. Serve chilled; toss with dressing before serving or offer on the side.
