  • 1 large egg yolk
  • 0.5 cup granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In one bowl, mix together flour, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, cream together brown sugar, butter, egg, and vanilla until smooth.
  4. Fold grated carrots into the wet mixture, then gradually add the dry ingredients until just combined.
  5. In a separate bowl, beat together cream cheese, egg yolk, and granulated sugar until smooth.
