  • 4 cloves fresh garlic, minced
  • 3 cups cooked rice (preferably day-old)
  • 1 cup mixed vegetables (frozen peas and carrots or fresh)
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • Salt and pepper to taste

Instructions

  1. 1. Dice chicken breasts into bite-sized pieces. Mince garlic and chop any fresh vegetables.
  2. 2. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Season chicken with salt and pepper; cook for 6-8 minutes until golden brown. Remove from skillet.
  3. 3. In the same skillet, sauté garlic for about 1 minute until fragrant.
  4. 4. Add vegetables and stir-fry for about 3 minutes until tender-crisp.
