  • 4 cups low-sodium vegetable broth
  • 2 cups fresh spinach, roughly chopped
  • 1 cup heavy cream or coconut milk
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 2 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add olive oil. Sauté the diced onion, carrots, and celery until softened (about 5-7 minutes).
  2. Stir in minced garlic and Italian seasoning; cook for another minute until fragrant.
  3. Add the drained white beans and vegetable broth. Bring to a gentle boil while stirring occasionally.
  4. Use an immersion blender to blend about half of the soup for a creamy texture while keeping some whole beans intact.
