- 1 cup granulated sugar
- 2 large eggs
- 1 cup semi-sweet chocolate chips, melted
- 1/2 cup caramel sauce (plus extra for drizzling)
- 1/2 cup chopped pecans (lightly toasted)
- 1 ½ cups crushed graham crackers
- 1/4 cup unsalted butter, melted
Instructions
- Preheat oven to 325°F (163°C). Mix crushed graham crackers with melted butter in a bowl. Press into the bottom of a springform pan to create the crust and bake for 10 minutes until golden.
- In a separate bowl, beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in melted chocolate until fully combined.
- Pour half of the cheesecake filling over the crust. Drizzle with caramel sauce and sprinkle half of the pecans on top. Add the remaining filling and smooth it out.
- Bake for approximately 55-60 minutes until edges are set but the center remains slightly jiggly. Turn off oven and let cool inside with the door ajar for an hour.
- Chill in the refrigerator for at least four hours or overnight before serving. Top with remaining caramel sauce and pecans.
