  • 1 TBSP plus 1 tsp cornstarch
  • 2 tsp vanilla extract
  • 1 tsp dry pectin or an extra 1/2 tsp cornstarch
  • 1/2 tsp ground cinnamon (for filling)
  • 1/4 tsp freshly grated nutmeg
  • 1/4 tsp kosher salt (for filling)
  • 1/2 cup light corn syrup (for sauce)
  • 3 tablespoons unsalted butter (for sauce)
  • 1 1/2 tsp kosher salt (for sauce)
  • 1/2 cup heavy cream (for sauce)
  • 1 TBSP Spiced Rum (for sauce)

Instructions

  1. Prepare the crust by mixing flour, salt, and sugar in a food processor. Add chilled butter and pulse until crumbly. Gradually add ice water until the dough forms. Chill for one hour.
  2. Roll out the dough into a circle, place it in a deep-dish pie pan, and crimp the edges.
