  • Salt and pepper, to taste

Instructions

  1. Heat a large skillet over medium heat. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear chicken for 3-4 minutes per side until golden brown; remove from skillet.
  2. In the same skillet, toast uncooked rice for 1-2 minutes while stirring frequently.
  3. Add chicken broth, BBQ sauce, and honey to the skillet; stir to combine.
  4. Return chicken to the skillet, bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes.
  5. Sprinkle mixed vegetables over the rice; cover and cook for an additional 5 minutes until rice is tender and chicken is cooked through.
  6. Let rest for 5 minutes before fluffing rice with a fork; garnish with green onions or parsley.
