Ingredients

Scale
  • 1 3/4 cups warm water (105-115°F)
  • 2 teaspoons sugar
  • 1 packet active dry yeast
  • 2 cups bread flour
  • 2 cups all-purpose flour
  • 2 teaspoons salt
  • 6 tablespoons olive oil (divided)
  • 1 jar raspberry preserves
  • 2 cups confectioners' sugar
  • 2–4 tablespoons whole milk (as needed for glaze)

Instructions

  1. In a mixing bowl, combine warm water, sugar, and yeast. Let sit for 5-10 minutes until frothy.
  2. In another bowl, whisk together bread flour, all-purpose flour, and salt.
  3. Add the yeast mixture to the dry ingredients and stir until combined. Knead in olive oil until smooth.
  4. Place dough in a greased bowl, cover with a towel, and let rise in a warm spot for about 30 minutes or until doubled.
  5. Preheat oven to 375°F (190°C). Transfer dough onto a parchment-lined baking sheet and flatten gently.
  6. Create small wells in the dough using your fingers and spoon raspberry preserves into each well.
  7. Drizzle remaining olive oil over the top and bake for about 18 minutes until golden brown.
  8. For the glaze, mix confectioners' sugar with milk until smooth. Drizzle over warm focaccia before serving.
