  • 8 ounces baby bella mushrooms
  • 4 tablespoons unsalted butter
  • 1 cup vegetable oil (for frying shallots)
  • 1/2 cup heavy whipping cream
  • 1/2 cup freshly grated parmesan cheese
  • Creole Cajun seasoning (to taste)
  • Chicken broth
  • Garlic
  • Flour
  • Lemon juice
  • Dijon mustard
  • Worcestershire sauce
  • Thyme
  • Red pepper flakes
  • Nutmeg
  • Kosher salt
  • Black pepper

Instructions

  1. Prepare the fried shallots by slicing them thin and frying in hot vegetable oil until golden brown. Drain on paper towels and season with Creole Cajun seasoning.
  2. Blanch trimmed green beans in boiling salted water for about 5 minutes until bright green yet crisp. Drain and set aside.
  3. In the same skillet used for shallots, melt butter over medium heat. Sauté mushrooms until soft, then stir in minced garlic and flour to create a roux. Gradually whisk in chicken broth until thickened. Add lemon juice, Dijon mustard, Worcestershire sauce, thyme, red pepper flakes (if desired), nutmeg, salt, pepper, heavy cream, and half of the parmesan cheese.
  4. Combine blanched green beans with the creamy mushroom sauce in a large bowl. Transfer to a baking dish.
  5. Preheat oven to 350°F (175°C) and bake uncovered for about 25 minutes until bubbly. Top with remaining parmesan cheese before serving.
