Ingredients
- 480 ml whole milk
- 300 ml double cream (heavy cream)
- 5 large egg yolks
- 300 g granulated sugar (divided)
- 1 vanilla bean pod

- In a medium saucepan, heat the whole milk and double cream over low heat with the split vanilla bean and seeds until simmering.
- In a bowl, whisk together the egg yolks and 100g sugar until thickened.
- Gradually pour warm milk into the egg mixture while whisking to temper.
- Return the mixture to the saucepan and heat gently while whisking until thick enough to coat a spoon.
- Strain through a sieve, cover with plastic wrap, and chill for at least two hours.
- Prepare caramel brittle by melting 200g sugar until golden brown, pour onto parchment paper to cool, then chop.
- Churn the chilled custard in an ice cream machine until soft-serve consistency is achieved.
- Fold in three-quarters of the caramel brittle, transfer to a container, freeze for at least six hours, then serve with remaining brittle on top.
