Warm up with this hearty Smoked Ham and White Bean Stew, where smoky ham melds beautifully with creamy white beans and tender potatoes. Topped with a sprinkle of Parmesan cheese, this comforting one-pot dish is perfect for chilly evenings or family gatherings. With minimal effort required, it transforms leftovers into a delicious meal in under an hour.

Ingredients

Scale
  • 2 cups diced smoked ham
  • 1 can (15 oz) great northern beans, drained and rinsed
  • 2 medium Yukon gold potatoes, diced
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil

Instructions

  1. In a large pot over medium heat, add olive oil. Sauté chopped onions and minced garlic until translucent (about 5 minutes).
  2. Stir in diced smoked ham and cook until heated through (3-4 minutes).
  3. Add diced potatoes and drained beans; mix well.
  4. Pour in chicken broth until ingredients are covered by about an inch. Bring to a gentle boil.
  5. Reduce heat to low; simmer uncovered for about 30 minutes or until potatoes are fork-tender.
  6. Stir in grated Parmesan cheese before serving; garnish with extra cheese if desired.
