  • 2 teaspoons instant dry yeast
  • 2 cups warm water (105°F – 115°F)
  • 1 tablespoon granulated sugar
  • 1/2 cup plus 2 tablespoons extra virgin olive oil
  • 4 teaspoons fine sea salt
  • 7 ounces Gruyère cheese (cubed)
  • 2 tablespoons fresh thyme leaves
  • Maldon sea salt flakes for topping

Instructions

  1. In a mixing bowl, combine warm water, sugar, and yeast; let sit until frothy (5–10 minutes).
  2. Mix bread flour and fine sea salt in a stand mixer bowl. Add yeast mixture and olive oil; blend on low.
  3. Knead on medium speed until smooth (8–10 minutes). Transfer dough to an oiled bowl; cover and let rise until doubled (1–2 hours).
  4. Preheat oven to 375°F (190°C). Punch down dough and stretch onto a greased baking sheet.
  5. Drizzle with olive oil and create dimples in the dough. Top with Gruyère cheese cubes, thyme leaves, and Maldon salt.
  6. Let rise again for about an hour until puffy. Bake for approximately 50 minutes or until golden brown.
