  • 6 large bell peppers (any color)
  • 2 cups cooked wild rice
  • 1 lb. 93% lean ground turkey
  • 2 cloves garlic (minced)
  • 1 small onion (diced)
  • 1 jar (16 oz.) crushed tomatoes
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • ½ tsp pepper
  • 1½ cups sharp cheddar cheese (shredded)
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 350°F. Cook the wild rice according to package instructions.
  2. Prepare the peppers by cutting off the tops and removing seeds. Boil them in water for about 5 minutes to soften slightly.
  3. In a skillet, heat olive oil over medium heat. Sauté garlic and onion until tender, then add ground turkey and cook until browned.
  4. Stir in crushed tomatoes, cooked rice, Italian seasoning, salt, pepper, and half of the cheddar cheese.
  5. Fill each pepper with the turkey mixture and place them in a greased baking dish.
  6. Bake uncovered for 25-30 minutes. Sprinkle remaining cheese on top and bake for an additional 5 minutes until melted.
