- 1 1/2 pounds boneless, skinless chicken thighs
- 1 cup cubed mango (defrosted if frozen)
- 3 tablespoons lime juice (from 2 limes)
- 2 tablespoons canola oil
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 tablespoon Sriracha
- 3 cloves garlic (minced)
- 1/2 teaspoon kosher salt
- Fresh cilantro leaves (for serving)
- 1 lime (halved for grilling)
Instructions
- In a blender, combine mango, lime juice, fish sauce, canola oil, brown sugar, Sriracha, minced garlic, and kosher salt until smooth.
- Transfer the marinade to a large Ziploc bag and add chicken thighs. Seal the bag and massage to coat evenly. Refrigerate for at least 4 hours or overnight.
- Preheat the grill to medium heat.
- Remove chicken from the marinade and set aside the marinade. Grill chicken for about 10 minutes per side or until it reaches an internal temperature of 165°F.
- While grilling, place halved limes cut-side down on the grill for flavor enhancement.
- Serve grilled chicken topped with reserved marinade sauce and fresh cilantro.
