- 2–3 English cucumbers, thinly sliced
- 1 cup plain Greek yogurt (full fat)
- 1/4 cup extra virgin olive oil
- 1 1/2 tsp red wine vinegar
- 1 1/2 tsp dried oregano
- 1 Tbsp fresh lemon juice
- 1 clove garlic, pressed
- Salt and pepper to taste

Instructions
- In a small bowl, marinate the red onion with olive oil, red wine vinegar, and dried oregano for at least 15 minutes.
- Place the sliced cucumbers in a large mixing bowl.
- In another bowl, combine Greek yogurt, lemon juice, garlic, dill, salt, and pepper; stir until smooth.
- Add the dressing and marinated onions (including all marinade liquid) to the cucumbers; toss well to combine.
