  • 1/4 teaspoon fresh cracked pepper
  • 1/4 cup fresh chopped dill
  • zest of 1 lemon

Instructions

  1. Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. Cut the baby red potatoes into wedges and place them in a large bowl.
  3. In a separate bowl, combine olive oil, oregano, rosemary, garlic powder, paprika, salt, and pepper. Pour this mixture over the potato wedges and toss until evenly coated.
  4. Spread the wedges in a single layer on the baking sheet and bake for 15 minutes.
  5. Flip each wedge and continue baking for an additional 15 minutes.
  6. Increase the oven temperature to 500°F (260°C) and bake for another 15 minutes until crispy, flipping again halfway through.
  7. While the wedges bake, mix yogurt sauce ingredients in a separate bowl.
  8. Serve warm with the yogurt sauce for dipping.
