- 2 lbs baby red potatoes
- 1/3 cup olive oil
- 1 teaspoon dried oregano

- 1/4 teaspoon fresh cracked pepper

- zest of 1 lemon
Instructions
- Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
- Cut the baby red potatoes into wedges and place them in a large bowl.
- In a separate bowl, combine olive oil, oregano, rosemary, garlic powder, paprika, salt, and pepper. Pour this mixture over the potato wedges and toss until evenly coated.
- Spread the wedges in a single layer on the baking sheet and bake for 15 minutes.
- Flip each wedge and continue baking for an additional 15 minutes.
- Increase the oven temperature to 500°F (260°C) and bake for another 15 minutes until crispy, flipping again halfway through.
