  • 300g uncooked orzo
  • 80ml extra virgin olive oil
  • 3 tbsp red wine vinegar
  • 150g baby plum tomatoes (halved)
  • 100g feta cheese (cubed)
  • 100g Kalamata olives (halved)
  • Fresh parsley (finely diced)
  • Dried oregano
  • Garlic (finely diced)
  • Cucumber (sliced)
  • Green pepper (diced)
  • Lemon juice

Instructions

  1. In a large mixing bowl, whisk together the olive oil, red wine vinegar, parsley, oregano, salt, and pepper.
  2. Add the halved tomatoes, cubed feta, olives, diced onion, and garlic; stir well and let marinate for at least one hour.
  3. Cook orzo in salted boiling water until al dente; drain and rinse under cold water.
  4. Add the cooled orzo to the marinated mixture along with cucumber and green pepper. Squeeze in lemon juice and stir to combine.
  5. Taste and adjust seasoning if necessary before serving.
