  • 67 medium Russet Idaho Potatoes (peeled and cut)
  • 1.5 cups Chicken Broth
  • 0.5 cup Extra Virgin Olive Oil
  • 0.33 cup Fresh Lemon Juice
  • 3 cloves Garlic (minced)
  • 1 tablespoon Dry Oregano
  • Salt (to taste)
  • 1 tablespoon Semolina

Instructions

  1. Preheat your oven to 400°F.
  2. Peel and cut the potatoes into halves or quarters, placing them in a 9X13 baking dish.
  3. In a mixing bowl, combine chicken broth, olive oil, lemon juice, minced garlic, and oregano. Taste and adjust seasoning if necessary.
  4. Add semolina to the mixture and pour over the potatoes in the baking dish. Cover with aluminum foil and roast for 40 minutes.
