Description

  • 4 large Yukon Gold Potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon oregano
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 cup fresh parsley (finely chopped)
  • 1 medium red onion (finely chopped)
  • 1/4 cup feta cheese (crumbled)
  • Optional: tzatziki, aioli or lemon wedges

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash the potatoes and cut them into uniform sticks.
  3. Soak the fries in cold water for 10-15 minutes, then drain and dry thoroughly.
  4. Toss the dried fries with olive oil and seasonings in a mixing bowl.
  5. Spread the fries on a parchment-lined baking sheet and bake for 15 minutes; flip them and bake for another 6-8 minutes until golden brown.
  6. Once baked, top with parsley, onion, and feta cheese before serving warm.
