  • 1/4 tsp Salt

  • 1/4 tsp Ground Ginger
  • 1/3 cup Granulated Sugar
  • 1/3 cup Dark Brown Sugar
  • 1/2 cup Vegetable Oil
  • 1/3 cup Full Flavored Molasses
  • 1 Large Egg (room temperature)
  • 1/4 cup Warm Water
  • 1 tsp Vanilla Extract
  • 1/2 cup Unsalted Butter (room temperature)
  • 8 oz Cream Cheese (room temperature)
  • 1 tsp Vanilla Extract
  • 2 cups Sifted Powdered Sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, and spices.
  3. In another bowl, mix granulated sugar, brown sugar, vegetable oil, molasses, egg, warm water, and vanilla until smooth.
  4. Gradually combine the dry ingredients into the wet mix until just blended.
  5. Drop rounded tablespoons of batter onto the baking sheets and bake for 10 minutes or until springy to the touch.
  6. Allow to cool before making the frosting by beating cream cheese and butter; add vanilla and powdered sugar until fluffy.
  7. Spread frosting between two cooled cakes to assemble.
