  • 225 g dark chocolate, chopped
  • 56 g butter
  • 2 eggs, room temperature
  • 100 g caster sugar
  • 90 g Demerara sugar
  • 1 teaspoon vanilla extract
  • 85 g chocolate chips

Instructions

  1. Preheat oven to 160ºC (320ºF) for fan setting or 170ºC (338ºF) for conventional.
  2. Melt dark chocolate and butter in a heatproof bowl over simmering water; stir in vanilla.
  3. In another bowl, whisk eggs with caster and Demerara sugars until light and fluffy.
  4. Sift together flour, cocoa powder, baking powder, and salt; add chocolate chips.
  5. Fold melted chocolate into egg mixture, then gently combine with dry ingredients.
  6. Scoop batter onto lined baking tray; bake for 12-14 minutes until set.
  7. Allow to cool slightly before enjoying.
