  • 6 tablespoons unsalted butter, softened to room temperature
  • 1 teaspoon vanilla extract
  • 1.5 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, salt, and cornstarch.
  3. In another bowl, mix softened butter and oils with both sugars until smooth. Add egg, vanilla extract, white vinegar, and food coloring; mix well.
  4. Gradually fold in dry ingredients until a thick dough forms.
  5. Scoop dough onto prepared baking sheets, spacing about three inches apart.
  6. Bake for 12-15 minutes or until puffed and lightly golden at edges. Cool on wire racks before frosting.
  7. In a medium bowl, combine cream cheese and butter until smooth. Mix in vanilla extract and powdered sugar until fully incorporated. If too soft, chill in the fridge until it firms up.
