  • 300 g Cavatappi macaroni
  • 5 onions (thinly sliced)
  • 3 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 baguette (for breadcrumbs)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tsp oregano
  • 1 tsp sugar
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika
  • 1/2 tsp nutmeg

Instructions

  1. Thinly slice the onions.
  2. In a large skillet, heat olive oil over medium heat and sauté the onions for 30–40 minutes until caramelized.
  3. Add beef broth if needed and simmer for an additional 10 minutes.
  4. In the same skillet, melt butter and whisk in flour; gradually add heavy cream to make the béchamel sauce.
  5. Stir two-thirds of the caramelized onions into the sauce and season with salt, pepper, parsley, and cheese.
  6. Cook pasta in salted water until just under al dente; combine with the sauce.
  7. Transfer to a baking dish, top with remaining onions and breadcrumbs.
  8. Bake at 350°F (175°C) for 10–15 minutes until golden brown.
