Ingredients
- 3 pounds beef short ribs
- 6 yellow onions, thinly sliced
- 3 tablespoons butter
- 2 tablespoons olive oil
- 8 cups beef stock
- 1 cup dry red wine
- 2 cups shredded Gruyère cheese
- Salt and black pepper, to taste
Instructions
- Season short ribs with salt and pepper. In a Dutch oven, heat olive oil over medium-high heat and brown the short ribs on all sides. Remove and set aside.
- In the same pot, add butter and more olive oil. Sauté sliced onions on low heat for 30-40 minutes until caramelized.
- Stir in minced garlic, then deglaze with red wine, scraping the pot’s bottom for flavor.
- Add beef stock, thyme, bay leaves, and return the short ribs to the pot. Cover and simmer for 2.5 to 3 hours until tender.
- For Gruyère toast, broil baguette slices until golden brown, top with cheese, and broil again until melted.
- Serve soup hot topped with Gruyère toast.
