- 1 ½ lbs chuck steak, cubed
- 5 large onions, thinly sliced
- 4 garlic cloves, minced
- 2 tbsp unsalted butter
- 2½ cups beef broth
- 1 ½ cups Gruyere cheese, grated
- 1 white baguette, sliced
- Olive oil, for cooking
Instructions
- Prepare ingredients: Trim and cube the chuck steak; slice the onions and mince the garlic.
- Brown the beef: Heat olive oil in a Dutch oven over medium-high heat. Season cubed beef with salt and pepper; brown all sides and set aside.
- Caramelize onions: In the same pot, melt butter over medium heat. Add onions and a pinch of salt; cook until golden brown (about 30 minutes).
- Combine ingredients: Stir in brown sugar, thyme, garlic, Worcestershire sauce, Dijon mustard, flour, half of the Marsala wine, beef broth, and return browned beef to the pot.
- Simmer: Bring to a boil then reduce heat to low; cover and simmer for about 90 minutes until meat is tender.
- Prepare bread topping: Brush baguette slices with olive oil; toast in a preheated oven at 400°F (200°C) until golden brown.
- Assemble & serve: Remove bay leaves from stew; ladle into bowls topped with toasted baguette slices spread with Dijon mustard and sprinkle with Gruyere cheese. Broil until cheese is bubbly.
