- 3 boneless, skinless chicken breasts
- 200g bacon
- 450g mushrooms
- 1 large onion
- 2 garlic cloves
- 60g unsalted butter
- 370g puff pastry (2 packets)
- 195ml chicken stock
- 195ml milk
- 2 tbsp Dijon mustard
Instructions
- Preheat oven to 410°F (210°C).
- Dice chicken and season with salt and pepper.
- In a frying pan, cook bacon until crispy; set aside.
- Sauté chicken in the bacon fat until mostly cooked; transfer to a plate.
- Cook mushrooms in the same pan until browned; set aside.
- Make sauce by cooking onions and garlic in butter, then adding flour, stock, and milk until thickened.
- Stir in mustard, thyme, bacon, mushrooms, and chicken.
- Line a pie dish with pastry; fill with mixture and top with another pastry layer.
- Seal edges, brush with egg yolk-milk mixture, score for steam release.
- Bake for 20 minutes at high heat; lower temperature to bake an additional 20 minutes.
