Ingredients
- 3/4 cup butter (softened)
- 1 3/4 cups light brown sugar
- 3 large eggs
- 1 tablespoon vanilla essence
- 1 pinch of salt
- 1 1/2 cups plain flour
- 1 cup mixed peel
- 1 cup candied cherries (quarter or chopped)
- 1/2 cup chopped candied pineapple
- 1/2 cup chopped dried dates
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×13 inch baking pan or line it with parchment paper.
- Cream together softened butter and brown sugar until light and fluffy.
- Add eggs one at a time, followed by vanilla essence, mixing well after each addition.
- In a separate bowl, whisk together flour and salt; gradually add to the wet mixture on low speed until just combined.
- Gently fold in mixed peel, cherries, pineapple, and dates using a spatula.
- Pour into the prepared pan, spreading evenly; bake for about 40 minutes until golden brown.
- Cool in the pan for 10 minutes before transferring to a wire rack; cut into bars once completely cooled.
