  • 1 3/4 cups light brown sugar
  • 3 large eggs
  • 1 tablespoon vanilla essence

  • 1 1/2 cups plain flour
  • 1 cup mixed peel
  • 1 cup candied cherries (quarter or chopped)
  • 1/2 cup chopped candied pineapple
  • 1/2 cup chopped dried dates

Instructions

  2. Grease a 9×13 inch baking pan or line it with parchment paper.
  3. Cream together softened butter and brown sugar until light and fluffy.
  4. Add eggs one at a time, followed by vanilla essence, mixing well after each addition.
  5. In a separate bowl, whisk together flour and salt; gradually add to the wet mixture on low speed until just combined.
  6. Gently fold in mixed peel, cherries, pineapple, and dates using a spatula.
  7. Pour into the prepared pan, spreading evenly; bake for about 40 minutes until golden brown.
  8. Cool in the pan for 10 minutes before transferring to a wire rack; cut into bars once completely cooled.
