  • 1 tablespoon soy sauce
  • 2 teaspoons rice vinegar
  • Juice of 1/2 lime
  • Warm water, as needed to thin the sauce

Instructions

  1. Marinate the Chicken: In a mixing bowl, whisk together coconut milk, curry powder, brown sugar, fish sauce, soy sauce, garlic, ginger, turmeric, and lime juice. Add chicken strips and coat well. Marinate for at least 1 hour (overnight for best results).
  2. Make the Peanut Sauce: In a saucepan over low heat, combine peanut butter, coconut milk, red curry paste, brown sugar, soy sauce, rice vinegar, and lime juice. Stir until smooth; add warm water if needed to thin.
  3. Grill the Chicken: Preheat your grill pan or BBQ. Thread marinated chicken onto skewers and grill for 4–5 minutes on each side until cooked through.
