Ingredients
- 2 tbsp vegetable oil
- 3 cloves garlic (minced)
- 1/4 cup diced onion
- 1 large carrot (3 – 4 oz)
- 2 tbsp tomato paste
- 1/4 cup tomato sauce (optional)
- 1 1/4 cups lentils (brown or green)
- 12 oz potatoes (cut into bite-sized pieces)
- 2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp thyme
- 1/2 tsp oregano
- 4–5 cups water or vegetable stock
Instructions
- Heat 2 tablespoons of vegetable oil in a large pot over medium heat. Add 1/4 cup diced onion and cook for 1 minute.
- Stir in 3 minced garlic cloves and 1 large diced carrot; sauté for another 2-3 minutes.
- Mix in 2 tablespoons tomato paste, optional tomato sauce, and 1 1/4 cups lentils; cook for about 1 minute.
- Add 12 ounces of diced potatoes and pour in 4 cups of water or vegetable stock. Season with 2 teaspoons salt, 1/4 teaspoon black pepper, 1/4 teaspoon thyme, and 1/2 teaspoon oregano.
- Cover the pot and bring to a boil. Reduce heat to medium-low and simmer for 25-35 minutes until lentils are tender.
- Taste and adjust seasoning as needed before serving warm.
