Ingredients

  • 3 cups cooked rice (preferably day-old)
  • 1 cup mixed vegetables (peas, carrots, bell peppers)
  • 2 large eggs, beaten
  • 3 tbsp low-sodium soy sauce
  • 2 green onions, chopped
  • 1 tsp sesame oil

Instructions

  1. Chop the vegetables into small pieces.
  2. In a skillet or wok over medium-high heat, add a teaspoon of oil and scramble the beaten eggs until fully cooked. Remove and set aside.
  3. Sauté the chopped vegetables in the same skillet for about three minutes until tender but still crisp.
  4. Add the cold cooked rice to the skillet and mix well with the vegetables.
  5. Pour in soy sauce and sesame oil; stir-fry for an additional two minutes on medium-high heat.
  6. Reintroduce scrambled eggs and green onions; stir thoroughly before serving.
