  • 1 pound large pasta shells
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 2 cups shredded provolone cheese
  • 3 cups sliced shiitake or cremini mushrooms
  • 2 cups frozen spinach, thawed and drained
  • Salt and pepper to taste
  • 1 stick (8 tablespoons) salted butter
  • 2 cups white wine or chicken broth
  • 2 teaspoons dried thyme
  • 2 chopped garlic cloves
  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano
  • Kosher salt and pepper to taste
  • 1/4 cup plain flour
  • 2 cups milk
  • 3/4 cup grated parmesan

Instructions

  1. Boil water in a large pot, add salt, and cook pasta shells until al dente. Drain and cool.
  2. In a skillet, melt butter over medium heat and sauté mushrooms until softened. Add garlic, thyme, basil, oregano, salt, and pepper; cook until fragrant.
  3. In a bowl, whisk flour and milk, then gradually add white wine/broth. Pour into the skillet with mushrooms and stir until thickened. Mix in mozzarella and parmesan.
  4. In another bowl, combine ricotta cheese with drained spinach; season with salt and pepper.
  5. Preheat oven to 375°F (190°C). Fill each pasta shell with the ricotta-spinach mixture and place in a baking dish lined with mushroom sauce.
  6. Pour remaining sauce over stuffed shells, cover with foil, and bake for 30 minutes. Uncover and bake an additional 10 minutes until bubbly.
