- 4 chicken thighs (boneless or bone-in, skin removed)
- 8 cups low-sodium chicken broth

- 2 celery sticks, finely chopped
- 2 carrots, sliced
- 6 oz rotini pasta
- 3 Tbsp fresh or frozen dill
- 1 tsp Mrs. Dash seasoning
- 1 Tbsp sea salt (to taste)
- 1 garlic clove, pressed
Instructions
- In a large soup pot, combine water, chicken broth, and sea salt. Bring to a boil.
- Add chicken thighs, cover partially, and cook for 20 minutes.
- Meanwhile, sauté onion and celery in olive oil in a skillet until softened. Add to the soup pot.
- Stir in carrots and rotini pasta; cook for another 15 minutes or until pasta is tender.
- Remove chicken to shred it, then return it to the pot along with seasonings and dill.
