  • 5 pounds chuck roast
  • 1/2 large white onion
  • 3 large garlic cloves
  • 3 bay leaves
  • 1/2 tablespoon salt
  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon onion powder
  • 1/2 tablespoon cumin
  • 1/2 tablespoon dried oregano
  • 7 ounces chipotle sauce
  • 1 cup beef broth
  • 12 corn tortillas
  • 3 cups shredded Monterey Jack cheese
  • Fresh pico de gallo and lime wedges for serving

Instructions

  1. Season the chuck roast with salt, garlic powder, onion powder, cumin, and oregano. Place it in a slow cooker with onion pieces, garlic cloves, bay leaves, chipotle sauce, and beef broth.
  2. Cook on low for about 4 hours until the meat is tender and easily shreds. Remove and shred the beef using two forks.
  3. Heat avocado oil in a skillet over medium heat. Briefly dip each tortilla into the chipotle broth and place on a plate.
  4. Assemble tacos by adding shredded beef and Monterey Jack cheese to each tortilla. Fold to form tacos.
  5. Fry each taco in the skillet until golden brown on both sides.
  6. Serve hot with pico de gallo, cilantro, and lime wedges.
