- 5 pounds chuck roast
- 1/2 large white onion
- 3 large garlic cloves
- 3 bay leaves
- 1/2 tablespoon salt
- 1/2 tablespoon garlic powder
- 1/2 tablespoon onion powder
- 1/2 tablespoon cumin
- 1/2 tablespoon dried oregano
- 7 ounces chipotle sauce
- 1 cup beef broth
- 12 corn tortillas
- 3 cups shredded Monterey Jack cheese
- Fresh pico de gallo and lime wedges for serving
Instructions
- Season the chuck roast with salt, garlic powder, onion powder, cumin, and oregano. Place it in a slow cooker with onion pieces, garlic cloves, bay leaves, chipotle sauce, and beef broth.
- Cook on low for about 4 hours until the meat is tender and easily shreds. Remove and shred the beef using two forks.
- Heat avocado oil in a skillet over medium heat. Briefly dip each tortilla into the chipotle broth and place on a plate.
