Ingredients
- 8 ounces wide rice noodles
- 1 pound boneless skinless chicken thighs
- 4 cloves garlic, minced
- 2–3 Thai red chilies, sliced
- 1 small onion, sliced
- 1 medium bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- 2 green onions, cut into pieces
- 1 cup fresh Thai basil leaves
- 3 tablespoons oyster sauce
- 2 tablespoons soy sauce
- 1 tablespoon dark soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 2 teaspoons lime juice
- 1 tablespoon water
Instructions
- Soak noodles in warm water for 15–20 minutes until softened. Drain and set aside.
- In a bowl, whisk together oyster sauce, soy sauce, dark soy sauce, fish sauce, brown sugar, lime juice, and water; set aside.
- Heat oil in a wok over medium-high heat. Stir-fry garlic and chilies for about 30 seconds until fragrant.
- Add chicken; stir-fry for 5–6 minutes until cooked through.
- Toss in onion, bell pepper, broccoli, and carrot; stir-fry for another 3–4 minutes until vegetables are crisp-tender.
- Add noodles and sauce; gently toss to coat and cook for an additional 2–3 minutes.
- Stir in green onions and basil; cook for another minute until the basil wilts.
- Serve hot with lime wedges.
