  • 2 cups vegetable broth or water
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • 1 bell pepper (diced)
  • 1 cup roasted red peppers (jarred or homemade)
  • ½ cup plain Greek yogurt
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water. In a medium saucepan, combine rinsed quinoa and vegetable broth/water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until liquid is absorbed.
  2. While quinoa cooks, chop cherry tomatoes, cucumber, and bell pepper into bite-sized pieces.
  3. In a blender, combine roasted red peppers and Greek yogurt. Blend until smooth; season with salt and pepper.
  4. Fluff cooked quinoa with a fork and layer it in bowls. Top with chopped vegetables.
  5. Drizzle roasted red pepper sauce over each bowl before serving.
