Ingredients
- 1/2 cup softened butter
- 1/3 cup vegetable oil
- 1/2 cup granulated sugar
- 1/4 cup powdered sugar
- 1 egg
- 2 & 1/3 cups flour
- 5 tbsp butter (for filling)
- 2/3 cup brown sugar
- 1 & 1/4 cup chopped pecans
- 1/3 cup heavy cream
- 1 tsp vanilla extract
- 1/4 tsp cinnamon
- 1 pinch nutmeg
- 1 pinch salt
Instructions
- Preheat oven to 350°F and prepare a baking sheet with parchment paper.
- In a mixing bowl, cream together softened butter, vegetable oil, granulated sugar, and powdered sugar until smooth. Add egg and vanilla extract; mix until combined.
- Gradually add flour, salt, and baking powder; mix until just combined.
- Scoop out cookie dough balls onto the baking sheet and flatten them slightly. Create a small well in the center of each cookie.
- In a separate bowl, combine the pecan filling ingredients (butter, brown sugar, chopped pecans, heavy cream, vanilla extract, cinnamon, nutmeg, and salt) until mixed well.
- Fill each cookie well with the pecan mixture and bake for 8–9 minutes or until edges are lightly golden.
