  • 1.5 pounds baby gold potatoes
  • 3 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/3 cup grated parmesan cheese
  • 1 tablespoon chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Boil the potatoes in salted water for 15–20 minutes until fork-tender. Drain and let dry briefly.
  2. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. Place boiled potatoes on the baking sheet and gently smash each one to about 1/2 inch thick using a flat-bottomed glass or potato masher.
  4. In a small saucepan, melt the butter over low heat. Stir in minced garlic and cook for 1–2 minutes until fragrant.
  5. Brush each smashed potato generously with garlic butter, then drizzle with olive oil. Season with salt, pepper, and half of the parmesan cheese.
  6. Roast in the oven for 20–25 minutes until golden and crisp; sprinkle remaining parmesan during the last 5 minutes of cooking.
  7. Remove from the oven, garnish with fresh parsley, and serve.
