- 8–10 sliced mushrooms
- 2 minced garlic cloves
- 150 g linguine
- 1 cup cooking cream
- 1/2 tsp crushed black pepper
- 1/3 chicken stock cube
- 1/2 tsp dried basil leaves
- 1 cup baby spinach
- 2 tbsp pine nuts
- 1/4 cup grated Parmesan cheese (plus extra for topping)
Instructions
- Cook linguine according to package instructions; do not rinse.
- In a frying pan, heat olive oil over medium-high heat and sauté sliced mushrooms until browned.
- Add minced garlic and cook for an additional 2 minutes without burning.
- Pour in cooking cream, add black pepper, crumbled chicken stock cube, and dried basil; simmer for 4–5 minutes until thickened.
- Stir in grated Parmesan cheese until melted into a creamy sauce.
- Drain cooked pasta and toss it in the frying pan with the sauce.
- Off the heat, mix in fresh baby spinach until slightly wilted.
- Serve hot, garnished with toasted pine nuts and extra Parmesan cheese.
