- 1 can Chipotle peppers in adobo sauce (use only the sauce)
- 2 cans sweet corn (drained) or 1 bag frozen sweet corn
- 1 can pinto beans (drained, rinsed)
- 5 cups chicken broth
- 1 cup heavy cream
- 1 cup instant rice (uncooked)
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 2 teaspoons garlic (minced)
- ¼ cup red onion (diced)
- 1 medium jalapeño pepper (seeded, diced)
Instructions
- Pat dry chicken thighs and season with salt and pepper.
- Sear chicken in a Dutch oven over medium-high heat until golden brown (2–3 minutes per side). Set aside.
- In the same pot, cook garlic, coriander, cumin, and adobo sauce until fragrant.
- Add corn, pinto beans, tomatoes, onion, jalapeño, and chicken broth; stir to combine.

- Shred chicken using two forks; return to pot.
