  • 1 can Chipotle peppers in adobo sauce (use only the sauce)
  • 2 cans sweet corn (drained) or 1 bag frozen sweet corn
  • 1 can pinto beans (drained, rinsed)
  • 5 cups chicken broth
  • 1 cup heavy cream
  • 1 cup instant rice (uncooked)
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 2 teaspoons garlic (minced)
  • ¼ cup red onion (diced)
  • 1 medium jalapeño pepper (seeded, diced)

Instructions

  1. Pat dry chicken thighs and season with salt and pepper.
  2. Sear chicken in a Dutch oven over medium-high heat until golden brown (2–3 minutes per side). Set aside.
  3. In the same pot, cook garlic, coriander, cumin, and adobo sauce until fragrant.
  4. Add corn, pinto beans, tomatoes, onion, jalapeño, and chicken broth; stir to combine.
  5. Return seared chicken to the pot and bring to a gentle boil.
  6. Reduce heat and simmer for 25–30 minutes until chicken reaches 165°F.
  7. Shred chicken using two forks; return to pot.
  8. Stir in uncooked rice and simmer uncovered for about 10 minutes until rice is tender.
  9. Slowly mix in heavy cream; adjust seasoning as needed before serving.
