  • 1 Tbsp extra virgin olive oil
  • 1 lb chicken breasts (or chicken thighs)
  • 1 tsp kosher salt (more to taste)
  • ½ tsp black pepper
  • 2 tsp Italian seasoning
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ¼ cup fresh basil, chopped
  • 4 cloves garlic, minced
  • 1 pint cherry tomatoes
  • ½ cup sun-dried tomatoes
  • 3 cup baby spinach
  • 1.5 cup orzo pasta, dry
  • 3 cup chicken broth (or chicken stock)
  • ¼ cup Greek yogurt
  • 1 cup shredded parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C) and prepare a large baking dish with cooking spray.
  2. Cube the chicken and season it with olive oil, salt, pepper, Italian seasoning, garlic powder, and paprika. Place in the baking dish.
  3. Add minced garlic, chopped basil, sun-dried tomatoes, cherry tomatoes, and baby spinach; mix well.
  4. Spread dry orzo over the mixture and pour chicken broth on top. Whisk in Greek yogurt until combined.
  5. Bake for 35–40 minutes until orzo is tender and chicken reaches 165°F (75°C).
  6. Stir in shredded parmesan cheese before serving and let sit for 10–15 minutes.
