  • 1/3 cup sugar
  • 2 Tbsp water
  • 8 oz cream cheese
  • 1 Tbsp vanilla paste
  • 8 oz Cool Whip Extra Creamy Whipped Topping
  • 2 cups gingersnap crumbs
  • 5 Tbsp melted butter
  • whipped topping or sweetened whipped cream
  • sugared cranberries
  • mint leaves

Instructions

  1. Prepare a 10-inch pie plate by buttering it well.
  2. In a saucepan, combine cranberries, sugar, and water. Bring to boil and simmer until thickened (about 15 minutes). Puree until smooth and chill.
  3. Mix gingersnap crumbs with melted butter and press into the prepared pie plate. Refrigerate.
  4. Blend chilled cranberry puree with cream cheese and vanilla until smooth.
  5. Gently fold in Cool Whip until fully combined.
  6. Spread the mousse into the chilled crust and refrigerate for several hours or overnight to set.
  7. Garnish with whipped cream, sugared cranberries, and mint leaves before serving.
